4 chicken breasts (skinless)<br>100g flour<br>2 eggs (beaten)<br>200g panko breadcrumbs<br>300g Jasmine rice<br>1 onion (sliced)<br>3 cloves of garlic (minced)<br>1 carrot (peeled and chopped)<br>2 tablespoons curry powder<br>500ml chicken stock<br>2 tablespoons soy sauce<br>1 teaspoon sugar<br>1 tablespoon cornflour mixed with 2 tablespoons of water.

This helps the coating stick to the chicken when frying.<br></div> <div class="method_step"><div class="method_num">4</div> Sauté your onions, garlic, and carrots until softened.<br></div> <div class="method_step"><div class="method_num">5</div> Stir in the curry powder followed by the chicken stock, soy sauce, and sugar. Let it simmer for 20 minutes until it forms a nice rich sauce.<br></div> <div class="method_step"><div class="method_num">6</div> Stir in cornflour and water mixture to thicken the sauce. Continue stirring for 2 more minutes or until sauce becomes silky smooth.<br></div> <div class="method_step"><div class="method_num">7</div> While your sauce simmers, it's time to fry your chicken. Heat some oil in a large pan and fry the breadcrumb-coated chicken until golden and crispy.<br></div> <div class="method_step"><div class="method_num">8</div> Lastly, serve the golden, crispy chicken over hot Jasmine rice with a generous ladle of your homemade curry sauce.<br></div>
